Mosquitos!

They are huge and I have large lumps on my ankles and arms. The itching is finally starting to subside after applying about half a bottle of bite and itch creme. Guess that's the payback for playing in the garden all last week.

Anyway, the yard and gardens looked fabulous last Saturday when my friends came to visit. No sun and it rained on and off but I was able to give a long tour of the gardens. The tour took well over and hour and a half, I got a lot of good advice, and comments on the direction I'm taking the gardens towards. I made a nice lunch with two of my favorite salads. Then we all sat and talked for hours. All in all a very nice day.

Strawberry Romaine Salad

1 pint of strawberries, cleaned and sliced
1 large head of romaine lettuce torn into bitesize pieces
1/2 cup thinly sliced red onion

Dressing
   3/4 cup mayonaise
   1/4 cup milk
  2 tbs cider vinegar
  2 tbs poppy seeds
   1/3 cupsugar

Mix all ingredients well in a jar with a lid. Refrigerate the dressing for several hours for flavors to develop. Shake the dressing and toss into salad right before serving.

Chicken and Fruit Salad

   Add to large bowl:
2 cups diced cooked chicken breast
   3/4 cup celery medium dice
1 1/2 cup green, red or mixed grapes
1 med can pineapple tidbits, drained
   3/4 cup pecans or walnuts

Blend 3/4 cup sour cream and 1/2 cup mayonaise together and then mix into salad. Chill until ready to serve.
